Catherine A. "Kay" Pedersen, 91, of Pleasantville, passed away on Sunday, May 10, 2026, at UPMC Northwest in Seneca.
Kay was born in New York City on August 30, 1934, to the late James and Mary Bergen Herbert. She married Roger Pedersen on January 21, 1955, in Brooklyn, NY. He preceded her in death on November 13, 2006.
She was a graduate of St. Agnes High School in Brooklyn, NY.
Kay was a homemaker and worked for several years for Blue Cross Blue Shield in Manhattan.
She was a member of Our Lady of Mount Carmel Roman Catholic Church in Queens, NY.
Kay was a devoted and loving mother, grandmother, and great-grandmother who took immense pride in her Irish heritage. She never missed a birthday, always making sure a thoughtful card was sent to those she loved. In her younger years, she joyfully prepared large family holiday meals that brought everyone together around the table. An avid reader with a remarkable mind, she absorbed everything she read and was always eager to learn. Kay also found great happiness in nature, especially tending to her flowers and nurturing her vegetable garden.
She is survived by her two children, Catherine "Kim" Strabone of Los Angeles, CA, and Christopher M. Pedersen and wife Julie of Neiltown; six grandchildren, Matthew Strabone and wife Yvonne of San Diego, Andrew Stabone and wife Meika of Los Angeles, Lorraine Pedersen and Brandon Hogue of Franklin, Christopher J. Pedersen of Erie, Eric Pedersen of Astoria, NY, and Jack Pedersen of Flanders, NY; three great-grandchildren, Luka Hogue, and Henry and Avery Strabone; several nieces and nephews and extended family.
Catherine was preceded in death by two sons, Roger P. and Jeffery T. Pedersen; her granddaughter, Taylor Pedersen; her siblings, Martin and James Herbert.
The family will receive friends at the Gordon B. Garrett Funeral Home Inc. 303 N. Washington St. on Saturday, May 16, 2026 from 10 a.m. to 11 a.m. at which time a memorial service will be condcuted.
Inurnment will be at Neiltown Cemetery.
